A layered bake of eggplant schnitzel, tomato and capsicum sugo and fresh mozzarella, cooked until golden brown and crispy on top but oozing in the centre. A family favourite midweek meal for 4 people. We suggest serving the bake with a side salad of fresh leaves and toasted seeds, with our parsley + tahini dressing.

              Cajun Chicken Taco, Chunky Mojo Salsa + Carrot, Radish Slaw

              Build your own soft shell tacos! Gently poached free-range chicken, shredded and marinated in paprika, Cajun spices, accompanied by soft blue corn tortillas, finely sliced carrot and radish and salsa of peppers, coriander and spices. Enough food for 4 people

              Ingredients, Free-range chicken, paprika, cumin seed, coriander seed, coriander, orange, lemon, lime, salt, pepper, slaw (carrot, kohl rabi, chives), salsa (green chilli, spring onion, garlic, coriander, paprika, cumin, coriander seed), tortilla (Blue corn masa, lime, salt)

              1. Pre-heat your oven to 180 degrees Celsius.
              2. Spoon the fish and any left over juices into a small to medium baking dish with high walls, enamel works well. Cover the dish with foil and bake in the oven for 12 minutes, uncovering after ten minutes to toss the pork with tongs before recovering.

                Rolled free-range pork roast, stuffed with sage and fennel and cooked until succulent and moist with crackling all over. Slices of porchetta are served with celeriac and cheese bake and granny smith apple sauce. Served with a simple garden salad, feeds 4 people

                Directions:

                2. Place gratin in the oven on the middle shelf and heat for 20 minutes or until piping hot in the centre
                3. On a flat baking tray lined with baking paper, place slices of pork in a single layer. Place tray in the oven on the top shelf and heat pork for 8 minutes until warmed all of the way through
                4. If you are making a salad, prepare it now

                          Vietnamese style vegetarian braised dish of eggplant, puffed tofu, shiso and tomato, slow cooked with lemongrass and ginger until all of the flavour meld together and melt in your mouth. Served with coconut rice and Vietnamese marinated shaved cabbage.

                          Ingredients: Eggplant, puffed tofu, tomato, shiso, onion, garlic, lemongrass, ginger, chilli, sugar, tamari, rice vinegar, rice (jasmine rice, coconut oil, coconut milk, salt), pickled cabbage (savoy cabbage, wombok, rice vinegar, garlic, chilli, tamari)

                          Directions:

                          1. Rinse the rice and place it in a pot along with the coconut milk, water, and salt. Set over medium-high to high heat. Stir occasionally to keep rice from sticking to the bottom of the pot and burning
                          2. Once the coconut-water has begun to gently bubble, stop stirring and reduce heat to low so the water simmers
                          3. Cover tightly with a lid and let simmer 15 to 20 minutes, or until most of the liquid has been absorbed by the rice
